Garlic Chicken

This is a really simple recipe that I whipped up for our Labor Day guests this year.

1/2 cup butter, melted

1 clove garlic (or more if you are so inclined) crushed and chopped

1 package chicken tenders or breasts with no rib meat

1 package of Panko bread crumbs

1 sprig of Rosemary

2 slices fresh Tomato

Salt and pepper to taste

Melt the butter and let cool. Meanwhile take the husk off the Garlic and crush and then chop into small pieces.

Put the garlic into the butter and mix, then pour into a wide, shallow bowl.

Put the Panko crumbs with salt and pepper into another shallow bowl.

Spray a glass baking dish with non-stick spray. Turn oven to 165 degrees.

Dredge each piece of chicken in the butter/garlic mixture and cover both sides with the Panko crumbs.

Place in the baking dish and bake until the chicken reaches 350 degrees.

I use the ThermoWorks Cooking Thermometer/Timer mentioned on the Maple Syrup page. It is really handy as you can leave the unit outside the stove and still check temps. There is also an alarm function built in.

Serve with the Rosemary and Tomato as a garnish. This was a hit by all diners!!
