I have to admit that Cracker Barrel had this before me, but I suspect they were not the first…anyway, I discovered this during our recent trip to St. Augustine Fla. for vacation. Since then, it has become my favorite breakfast.

The sandwich is 1 piece of toast ( I like the 12 grain from Pepperidge Farm), add a thin layer of Mayo (YES!! you would be surprised at the flavor), top with one over easy egg and a slice of fresh tomato. Salt and pepper are optional and I have added Rosemary or crushed Basil on occasion. I have even used a dollop of sour cream to set it off.
