How to handle the Zuchini overload!

Got more Zuchini than you can eat? Well you can always blanch and freeze some, or turn them into pickles, or make bread or pancakes, or stuff them or grill them or just about anything, but to try a new twist on them, turn to the saute pan and turn them into pasta!!!

Use a Julienne peeler and go to work on a Zuchini. The results will look like Angel Hair pasta and will be a mix of green, from the skin, and white from the insides. Stop peeling the Zuchini when you get near the seeds.

Crush a clove of garlic and saute it in a skillet with 2 or 3 tablespoons of butter. When the butter is infused with the garlic, add the Zuchini and toss until tender crisp. Add some crushed herbs, rosemary, basil or whatever is your favorite and heat for another minute or so.

Turn out into a colorful bowl and serve immediately. I guarantee this does not taste like Zuchini!
